Air-Fryer Mascarpone Mushrooms and Pasta
Yes, you must prepare the pasta separately, but the sauce requires so little attention that it essentially cooks itself, giving you more time! A beautiful flavor fusion is created by combining creamy pasta with earthy mushrooms.
Total time: 25 minutes; 4 servings
Ingredients:
- Spray with vegetable oil
- 4 cup mushrooms, sliced
- 1 large yellow onion
- 2 garlic cloves, minced
- 1/4 cup heavy cream or half-and-half
- 8 oz. of mascarpone cheese
- 1 tablespoon dried thyme
- 1 tsp. kosher salt
- 1 teaspoon ground black pepper
- 1/2 teaspoon crushed red pepper flakes
- 4 cups of cooked konjac noodles, cauliflower rice, linguine, or spaghetti
- 1/2 cup of grated Parmesan cheese.
Directions:
- Spray vegetable oil in a 7-inch-diameter, heatproof pan.
- Combine the mushrooms, onion, garlic, mascarpone, cream, thyme, salt, black pepper, and red pepper flakes in a medium bowl. Stir to combine. Add the mixture to the pan that has been prepared.
- Insert the pan into the basket of the air fryer. Stir halfway through the 15-minute frying period with the air fryer set to 350°F.
- Separate the pasta into four small bowls. Over the spaghetti, spoon the mushroom mixture evenly. Add some Parmesan cheese and then serve.
Air-fried chicken tenders
Total time: 1 hour and 45 minutes; about 6 pieces
Ingredients:
Chicken:
- 3/4 cup buttermilk
- 2 teaspoons Worcestershire sauce
- 1/2 teaspoon paprika
- 1 pound chicken tenders
- 1 1/2 cups panko
- 1/4 cup grated Parmesan
- 1 tablespoon olive oil
- Kosher salt
Dipping Sauce:
- 1/4 cup mayonnaise
- 3 tablespoons yellow mustard
- 2 tablespoons honey
- 1 tablespoon Dijon mustard
Directions:
- For the chicken: In a sealable plastic bag, mix the buttermilk, Worcestershire sauce, and paprika. Make sure the chicken is fully coated before adding it. Place the bag in a bowl after sealing it. For one hour, marinate at room temperature.
- In the meantime, combine the panko, Parmesan, olive oil, and 14 tsp salt in a pie plate or shallow baking dish.
- To make the dipping sauce, combine the mayonnaise, Dijon, honey, and yellow mustard in a small bowl.
- Set a 3-quart air fryer at 390 degrees Fahrenheit. Shake off any extra buttermilk before taking one piece of chicken out of the bag at a time. Place the panko on top, then use your hands to carefully press it into place so that it sticks evenly. Place the excess in the air fryer basket after giving it a light shake to remove it. Repeat the process with the remaining chicken (approximately 4 pieces) and cook for 7 minutes on each side or until golden brown and well done. Repetition and serving with the dipping sauce are required for the leftover chicken.
Zucchini Pizza Fritters
Total time: 20 minutes; 12 servings
Ingredients:
• 2 medium zucchini
• 1 medium potato, peeled
• 1/2 small onion
• 1 large egg, lightly beaten
• 2 tablespoons all-purpose flour
• 1/2 cup shredded Parmesan cheese
• 1 teaspoon garlic powder
• 1 teaspoon onion powder
• 1/2 teaspoon dried parsley flakes
• 1/2 teaspoon salt
• 1 teaspoon pepper
• Optional: Marinara sauce, tzatziki sauce, or ranch dressing
Directions:
- Set the air fryer to 400 degrees. Grate the onions, potatoes, and zucchini coarsely. Grated veggies should be placed on a double layer of cheesecloth or a dry tea towel. Raise the edges and squeeze out any excess liquid. Add the egg, flour, Parmesan, garlic powder, onion powder, parsley, salt, and pepper after transferring to a large bowl. Make 1/4-cup patties out of the mixture.
- Grease a tray and arrange patties on it in the air fryer basket in batches. Cook for 15-20 minutes, or until lightly browned. If preferred, serve it with sauce.
- Using an oven: 400° preheat. Put the fritters on a baking sheet covered with parchment paper. Bake for 15 to 20 minutes, or until golden brown.
Air fryer french fries
Total time: 25 minutes; 2 servings
Ingredients:
- Nonstick cooking spra for the basket
- 1 medium russet potato (approximately 6 ounces), peeled
- 1 tablespoon of olive oil
- Kosher salt and freshly ground black pepper.
Directions:
- Spray the basket of an air fryer with nonstick spray and preheat it to 380 degrees Fahrenheit.
- Slice the potato into 1/4-inch thick pieces after halving it lengthwise. Slices should be cut into 1/4-inch sticks. Fries should be placed in a medium basin, thoroughly rinsed with cold water, drained, and dried with paper towels.
- In a medium bowl, combine the oil and fries. Add 1/2 teaspoon salt and several grinds of pepper. Fries should be placed in the air fryer basket in an even layer, without overlapping, and cooked, turning once halfway through, for 14 to 16 minutes, until golden brown and crisp. Remove it, then sprinkle it with salt.
Air-Fryer Garlic Bread
Total Time: 20 minutes; 8 servings
Ingredients:
- 1/4 cup softened butter
- 3 tbsp grated Parmesan cheese
- 2 minced garlic cloves
- 2 tsp minced fresh parsley or 1/2 teaspoon dried parsley flakes
- 8 slices of ciabatta or French bread
Directions:
- Set the air fryer to 350 degrees. Spread over bread after combining the first 4 ingredients in a small bowl.
- Place bread on a tray in an air fryer basket in a single layer, working in batches. Cook for 2 to 3 minutes or until golden brown. Serve hot.
Air Fryer Fried Rice with Sesame-Sriracha Sauce
Total time: 30 minutes; 1 to 2 servings
Ingredients:
- 2 cups of cooked white rice
- 1 tbsp. vegetable oil
- 2 tsp sesame oil, toasted
- Kosher salt and freshly ground black pepper
- 1 teaspoon Sriracha sauce
- 1 tbsp. soy sauce
- 1/2 teaspoon toasted sesame seeds, plus more for topping
- 1 large egg, lightly beaten
- 1 cup thawed frozen peas and carrots
Directions:
- In a bowl, combine the rice, 1 tablespoon of water, 1 teaspoon of sesame oil, and vegetable oil. Rice should be salted and peppered before being coated. Transfer to a 7-inch round foil pan, metal cake pan, or air fryer insert.
- Place the pan inside a 5.3-quart air fryer, turn the heat to 350 degrees F, and cook for 12 minutes, stirring halfway through, until the rice is gently toasted and crunchy.
- In the meantime, combine the remaining 1 teaspoon of sesame oil, sriracha, soy sauce, sesame seeds, and in a small dish.
- Turn on the air fryer, then add the egg on top of the rice. Close the lid and cook for about 4 minutes, or until the egg is fully cooked. Reopen, add the peas and carrots, and mix to distribute and break up the egg in the rice. To heat the peas and carrots, cover and simmer for a further 2 minutes.
- Place the fried rice in dishes, top with some sauce, then top with additional sesame seeds.
Air-Fryer Chocolate Chip Oatmeal Cookies
Total Time: 30 minutes, 6 dozen per recipe
Ingredients:
- 1 cup softened butter
- 1 cup sugar
- 3/4 cup brown sugar, packed
- 2 large eggs, room temp.
- a tsp vanilla extract
- 3 cup quick-cook oats
- 1-1/2 cups all-purpose flour
- 1 box (3.4 oz.) instant vanilla pudding mix
- 1 tsp. baking soda
- 1 teaspoon sea salt
- 2 cups chocolate chips, semisweet
- 1 cup nuts, chopped
Directions:
- Set the air fryer to 325 degrees. Cream the butter and sugars in a big bowl for 5-7 minutes, or until they are light and creamy. eggs and vanilla after mixing. Oats, flour, dry pudding mix, baking soda, and salt should all be whisked together before being gradually added to the creamed mixture. Add nuts and chocolate chips and stir.
- Spoon tablespoons of dough onto baking sheets and lightly press down. Place in batches on the oiled tray in the air fryer basket, spacing 1 in. apart. Cook for 8 to 10 minutes, or until gently browned. Remove and cool on wire racks.
